Ramon's Village, San Pedro

Okay, this is a picture of the pineapple chicken we had.  Do I need to say anything else.  Not only was this dish to die for, it was beautiful to look at too.





Flayva's- San Ignacio (Cayo)

Across Belize, almost to the Guatemala border, is San Ignacio in the Cayo District.  We waved over a local pedestrian and asked for a good authentic meal.  He suggested, well actually led us all the way, to Flayva's.  We were not disappointed.

Although the breakfast menu looked delicious, we were told the cook was just finishing up a pot of Espeneche, a local favorite.  We decided to wait on this dish which is a onion/chicken soup.


Now those are some good looking people.  Half of them American, half of them Belizean.


At last.  Our soup has arrived.  The aroma was nothing compared to the taste.  This little bowl of onion and chicken soup is so loaded with flavor my tastebuds were doing a happy dance.  Served along side the soup...homemade corn tortillas.  I really didn't think I could ever find anything this plain looking that was so flavorful...until Polita (hiding with the purple shirt) brought me over some of her homemade Espeneche a couple of days later.  Let's just say, I can still taste those wonderful flavors.

Elvi's Kitchen-Oh So Good!

More yummy goodness from San Pedro, Belize. 


Situated on a corner right on Middle Street, Elvi's Kitchen is an adorable local restaurant with a lime green exterior and sand floor, thatched roof interior.  



Can you believe all this is inside?  How fun!  And yes, that is sand on the floor, freshly raked.  How cool!


They have a large menu selection so there should be something for everyone.  Prices shown on the menu are in Belizean dollar, so divide in half and that's the US version.  Not too bad.


I had the chicken nachos.  They were delicious.  I highly recommend.  John and I could have easily shared this meal, but he chose a chicken burrito.  Good choice there also.  I had a bite.  Yum!

Aji Tapa

While on Ambergris Caye we are determined to try as many different restaurants as we can.  We're good at eating so this should be a piece of cake.  Last night we ventured south down the beach where we had reservations at Aji Tapa Bar.  Tapa means appetizer in Spanish, I had to ask.  The place was romantically tucked in amongst mangrove and palm trees with faint lighting nestled along the branches.  

















Puerca con Pina:  pork tenderloin stuffed with mango & pineapple with mashed potatoes and salad topped with a ginger vinaigrette.  It was delicious.
